Coconut Crush Smoothie Recipe
Enjoy a taste of summer with a refreshing coconut smoothie. Chopped mint, pineapple and lime blended with coconut water to make the perfect summer drink.
Suitable for Vegans
250ml coconut water
100ml coconut milk
¼ cup of pineapple, skin removed
A generous splash of fresh lime juice
A bunch of mint leaves
Optional garnish – mint leaves
Chop the pineapple and pop into a freezer bag.
Freeze the pineapple so you don't need to add ice.
(This will make your smoothie lovely and thick, not watery.)
Pour the coconut water and coconut milk into a blender.
Add the frozen pineapple.
For extra thick yumminess, add extra fresh pineapple.
Add mint leaves and blend it up!
Garnish with mint leaves and voila. Frrr-esh.
