Pret’s Beetroot Humous Recipe
Enjoy our quick and easy-to-make beetroot humous.
Suitable for Vegans
400g raw beetroot
1 tin of chickpeas (drained and rinsed)
Juice of 1 lemon
1 clove of garlic
140g olive oil
2 tbsp tahini
Handful of fresh dill
1 tsp ground cumin
Pinch of salt
Preheat the oven to 190°C/fan170°C/gas 5.
Roughly chop the peeled beetroot and put in a small roasting tin. Drizzle with 4 tbsp of olive oil. Season well.
Roast for 40-60 minutes (until the beetroot is tender).
Put half of the beetroot aside.
Put all the remaining ingredients into a blender and blitz until smooth.
Pulse in the reserved beetroot to give a chunky beetroot texture.
