Pret’s Beetroot Humous Recipe

Enjoy our quick and easy-to-make beetroot humous.

Suitable for Vegans



  • 400g raw beetroot

  • 1 tin of chickpeas (drained and rinsed)

  • Juice of 1 lemon

  • 1 clove of garlic

  • 140g olive oil

  • 2 tbsp tahini

  • Handful of fresh dill

  • 1 tsp ground cumin

  • Pinch of salt


  1. Preheat the oven to 190°C/fan170°C/gas 5.

  2. Roughly chop the peeled beetroot and put in a small roasting tin. Drizzle with 4 tbsp of olive oil. Season well.

  3. Roast for 40-60 minutes (until the beetroot is tender).

  4. Put half of the beetroot aside.

  5. Put all the remaining ingredients into a blender and blitz until smooth.

  6. Pulse in the reserved beetroot to give a chunky beetroot texture.

  7. Enjoy!
