Souper Tomato Soup Recipe
Our gloriously tomatoey Souper Tomato Soup is full of crushed, chopped and pureed tomatoes – it’s a really marvellous tomato soup!
Suitable for Vegans
½ tbsp of olive oil
1 medium onion, roughly chopped
1 stick of celery, sliced
1 large carrot, peeled and diced
1 clove of garlic, chopped
1 tbsp of tomato puree
600ml vegetable stock
350g tomato passata
380g chopped plum tomatoes
2 medium sized tomatoes, roughly diced
A pinch of salt
Freshly ground black pepper
A sprig of fresh oregano, roughly chopped
Gently sweat the onion, celery, carrot and garlic in the olive oil for 10 minutes, with an occasional stir, until soft.
Add the vegetable stock, tomato puree and tomato passata.
Simmer for 10 minutes and then blend until smooth.
Pour in the chopped plum tomatoes and freshly diced tomatoes and sprinkle in the salt, black pepper and oregano.
Bring the soup to a slight boil and 5 minutes later it’s ready!
